SERVES UP TO 6 PPL

The classic Hyderabadi style biryani is a thing of beauty.  I first came across this recipe whilst travelling through India in 2006, an elderly street hawker was selling the biryani from a little hut to travellers. I went to take a closer look at what everyone was crowding around and that’s when I smelt the beautifully aromatic rice dish. Layers of aged basmati cooked with a plethora of aromatic spices and tender morsels of slow cooked goat. I reached into my wallet and walked away a bowl of biryani and piece of paper with the recipe. I’ve been cooking this recipe now since 2006 and I take pride in saying that I was the first to introduce the goat biryani to Birmingham all those years back!

This recipe has become a favourite of our guests at Opheem and all my chef friends who often request this when they visit the restaurant. So after many requests we’ve decided to create a biryani kit that will have all the components for you recreate this at home. It’s a fantastic centre piece dish for any dinner party or for a hearty family meal.

INSTRUCTIONS

Preheat Oven to 150c

Pour the curried goat mixture into a casserole and warm the curry through on your hob. (this will be the same dish that goes into the oven).

Sprinkle a generous handful of chopped mint and coriander if you have it. Cover the goat curry with an even layer of the rice provided.

Now cover with foil and place a tigfht fitting lid onto the dish in order to the trap the steam as the biryani is warming through.

Place the dish into the oven and bake for 30 minutes.

Whilst the biryani is baking, take the kachumbar salad out of the bag, toss with olive oil and dust with the salad masala. Finish with lemon juice just before you service.

10 minutes before your biryani is ready, warm the baingan in a pan on your stove, simmer gently until piping hot.

Once the biryani has been baking for 30 minutes, remove from the oven, peel back foil (check to see it is piping hot and above 70°C) and garnish with the kibbled onions, more fresh mint and coriander.

Serve with raitha and dressed kachumbar salad.

Absolutely awesome. A real taste of India. The goat was beautifully tender, and the spicing of the dish incredible. Loved the aubergine side along with the salad. Will be ordering this again.

Totally delicious, plenty for 6 greedy people (although I did supplement with naan), and very simple to put together. A proper feast, and excellent value for money even with the carriage. As someone said previously, you won’t be disappointed, and I will definitely order this biryani again.
