Centuries of trade across the Malabar ports introduced together arabs, chinese, portuguese, dutch and british settlers to local cooks along with them important vegetables and spices. The cross cultural exchange that has helped developed centuries old recipes shaped the balance of this rich coconut, warm spice and tamarind dish.
