Keralan fisherman’s curry; cod loin simmered in a curry leaf tempered coconut milk sauce soured with unripe mango
This is an Opheem favourite and beautiful example of the incredible seafood dishes of the Malabar cost. Local ingredients of abundant fish, coconut and wild raw mango create a sauce that’s balanced, rich with tang. Mild but fantastic depth of flavour with a background heat from ginger and tang from the geen mango. It’s bright and a harmony of sour and light spice. This dish highlights that mild dishes should still pack with flavour as opposed to takeaway versions where the concept is just ‘use less chilli’.
