Celebrating the bhuna where spices are dry-roasted and then gentle fried drawing essential oils to give a deep aromatic base to cook our chicken in. It’s a dish of mystery but celebrates a century old technique to create layers of intense flavour practiced across the entire Indian subcontinent.
