A welcome new addition to our menu, the Nihari first emerged in the 18th Century with Mughal influenced courts in Lucknow. Initially a high energy breakfast, it later was refined with ghee and a fragrant spice blend. The Old Delhi tradition used to create a solera style method to keep a little over every days batch to stir into the next pot to continue to deepen the stews flavour. The Nalli style focuses on the marrow-laden shank that adds a beautiful richness. Great with some naan traditionally too.
