Tracing it’s roots to the plains of the indus valley where early agrarian societies cultivated a wide array of vegetables. Keyhole ovens have suggested stewed vegetables exist as far back as 3000BC as the first foundations for Punjabs love of veggie dishes and 5000 years of evolutions of the cuisine. With waves of immigration and trade as well as invasions, Punjabis absorbed influence in their cuisine with new spices and cooking techniques into their mixed vegetable dishes. The 16th century arrival of Portuguese traders brought even more vegetables and the community took them willingly to continue to evolve. At it’s core the Punjabi subji represents the evolution of all Indian cuisine as a melting pot of the worlds spices and ingredients.
