DHABA GOSHT – Punjab
Spicy North Indian Mutton curry. Mutton on the bone simmered with caramelised onions, roasted tomato and Kashmiri chilli sauce.
In the early 20th century, motor traffic increased massively across Northern India and saw the Dhaba Gosht – literally “meat cooked the Dhaba way”- in every roadside eatery that were known as ‘Dhabas’. Celebrated as a dish synonymous with the culture, it’s fiery, rich and melt in the mouth. It’s the years of heritage and refinement, details in the cooking that developed it’s reputation that’s sadly been dulled in the modern international curry version.
