Roasted butternut squash with tempered mustard greens and spinach curry
Historic vegetarian dish from the northern plains of the subcontinent balancing sweetness of squash, earthy texture of the spinach with balance of mustard. There’s no clear record of the origins of this dish but find variations all over India and shows a completely different style with chilli heat not present at all.
